Made With Love Fruit Cake

My Mum and I needed a kitchen-cupboard-clean-out since they were cluttered up with junk and it was impossible to find anything! However, amongst all the junk we did find something useful, raisins. Flame raisins and golden raisins. So, all you need now is to add a few apricots, cranberries and dates (and whisky), put in in the oven for three hours, be patient, take out and voila! Mince meat! Now for the pastry. The thing is, over Christmas, I had quite a few mince pies and I am kind of full of them, and that’s why we made fruit cake.  And that’s why we didn’t make any pastry.

And that picture proves why it’s called ‘Me, You, and the cake’, although its actually my cake!! Here’s how I did it;

First, the messy part! MIXING!

Then I put the mixture into a pan almost ready to bake. Cooking is all about patience (which I know lots about)

3 1/2 oz unsalted butter
7 oz golden caster sugar
4 large eggs
10 1/2 oz self-raising flour
14 oz mincemeat

Preheat the oven to 180 degrees C.

Grease and line an 8″ square baking pan.

Cream the butter and sugar, then beat in the eggs. Fold in the flour and mincemeat until evenly combined.

Scrape the batter into the prepared pan and level the top.

Bake in the centre of the oven for 35 to 45 minutes until golden brown, risen and springy to touch.

Turn out and cool on a wire rack.

Serve as slices of cake with glasses of sherry … or with dollops of custard or ice cream for a pudding.
